Constantinou
Costas Constantinou is a self-taught winemaker who makes his wine in a small local winery in the village of Pera Pedi. His involvement in production was not initially related to wine, because his first product was a pure and interesting orange liqueur which was given the name "Orali", a coined word from the combination of ora (orange) and li (liqueur).
This liqueur, which came out in 1992, uses as raw material orange peel scrapings releasing extract in 600 alcohol for a period of two months. At the end of the extracting process the alcohol content drops to 35% vol. which is also the alcoholic title of the bottled product. In the last few years "Orali" acquired an additional dimension in the form of a second liqueur called "Orali Coffee Liqueur", a name that spells out the fact that it is produced with the addition of coffee essence. As regards wine, things are more recent but also more dynamic, as Mr Constantinou intends to throw himself heart and soul into this matter. He will be moving the business to a beautiful spot in the area where he is building a spacious, carefully designed modern winery capable of turning out 250 thousand bottles a year.

Levanda
The winery's semi-dry rosé will entice you to try it the moment you look at its beautiful pink colour. Aromatically, it will not disappoint you in the least. You will smell the fine, lively aromas of strawberry, morello and caramel the moment you lift the glass to your nose. It has a fruity, nervy and aromatic mouth with a slightly discernible fattiness thanks to the few unfermented sugars left in the wine. Exceptionally good value for money.

Shiraz 2007
This is the winery's best red wine that I have tasted so far. Aromatically, it combines fruit (berries, morello) with vanilla and oak. The fruitiness is still obvious in the full, rich mouth, the tannins are supple and round, but the intense acidity of the wine is perceptible and gives an excessively lemony overall taste.

Ayioklima dry
Of a higher quality than the medium dry white that bears the same name. Its intense, attractive aromas stand out – mainly peach, apricot and pineapple. The fruity element is present in the mouth as well, along with a lively, well-balanced acidity and an aftertaste of good duration. It is a fairpriced Xynisteri for short-term consumption.

Ayioklima medium dry
The winery's medium dry white is a simple wine for everyday use at a fair price. Faint yellow in colour, with simplestructured citron and green herbal aromas, light in taste with good acidity that balances the few unfermented sugars that the winemaker decided to retain, and with an aftertaste of satisfactory intensity.
